Theastmas Thanksgiving Leftovers Pizza
We try to change up the menu each year for the Theastmas meal. There are a few staples we have every year: candy corn or candy pumpkins, jelly beans, peppermint sticks/candy canes, Peep s’mores for dessert, and a large salad with dyed hard boiled eggs. Last year we added jello pumpkins, Christmas trees, and eggs. For the entree, we had Thanksgiving Leftovers Pizza. It turned out amazing! I don’t know why we didn’t try this before. It may not be the best looking food, but it tastes delicious.
This recipe is for 1 pizza, although we ended up making 4 or 5 pizzas. The box of stuffing, a jar of gravy, and a can of cranberries will get you through several pizzas. I took the easy route since I knew we would be making lots of pizzas, and used a premade crust, jar of gravy, box stuffing, and a can of cranberry sauce. I did make homemade mashed potatoes.
You will need:
- 1 pizza crust
- 2 Tablespoons unsalted butter
- 1 clove garlic, finely minced
- 1 cup mashed potatoes
- ¼ cup milk
- 2 ¼ cup extra sharp cheddar cheese, shredded
- 2 ½ cups cooked, chopped turkey (For Theastmas, we used Oscar Mayer Carving Board turkey which has thicker slices. I found it in the lunch meat section. You could also ask at the deli for really thick slices of turkey.)
- 1 cup whole berry cranberry sauce
- ¾ cup stuffing (We used the turkey flavor stuffing.)
- ¼ cup turkey gravy
Directions:
- Preheat oven to 400℉.
- If you are making your own dough, mix dough together. Form dough into shape on a pizza stone or greased baking sheet. Bake about 8 minutes, or until lightly browned. Set off to the side. Note: For best results, I also baked the pre-made pizza crust for about 8 minutes, or until lightly browned. I find it helps keep the crust from turning soggy once the toppings are added.
- Melt butter in a large skillet over medium heat. Add garlic and cook 1-2 minutes, until garlic is softened (do not fry the garlic). Add milk and mashed potatoes. Stir to combine. Add a ½ cup of the shredded cheese. Stir to combine.
- If making stuffing from a box, make stuffing per box instructions and set aside.
- Spread mashed potato mix onto the pizza crust.
- Add other toppings (stuffing, turkey, cranberries) evenly over the potatoes. Drizzle the gravy and add the remaining cheese.
- Bake 10-12 minutes, or until cheese is melted and pizza is browned.
